Speaking to the Daily Star Sunday, the Britain's Got Talent judge said she will never give birth again, following a severe haemorrhage during her labour with Hollie, when she almost died.
Amanda, who is also mum to older daughter Lexi, six, said: "I don't want to have any more children of my own - I want to live.
"I've got two beautiful girls. I'm 41 now and these are the children I was meant to have, so I won't try for another baby. I'm definitely the kind of person that could adopt. When I'm 60 I'll think about adopting or fostering.
"I'm just so happy to be alive. Touch wood nothing bad will happen in the next couple of years - I don't think I could handle any more. I always tried not to sweat the small stuff but now I sweat it even less. I have the most amazing home life and husband."
Hollie's dramatic arrival followed a tough couple of years for Amanda and husband, Chris Hughes. Following a miscarriage in 2010, Amanda lost a baby seven months into her pregnancy last year.
She spent three days in intensive care after Hollie's birth, when Amanda's heart stopped for 40 seconds and she lost around 13 litres of blood.
But she didn't let a little thing like near death stop her racing back to her judging seat. She was back in action just two weeks after giving birth, taking Hollie along with her to the show's auditions.
